Struggling to know how much to prep of what items? Having issues with food cost control and food waste? Use Avero's Prep Calculator to prep based on historical data. This data will allow you to predict what you should prep based on sales from the past 5 like days. So if you are prepping for a Tuesday, it'll base the forecast on the last 5 Tuesdays, instead of a full week including days with sales that vary widely.

Running a Prep Calculator
The Prep Calculator is located under the Sales heading in Avero. It will default to show you an average of the last 5 like days. You can alter the anticipated cover or check count to customize a prep list for your day.
View By
- If your business counts covers consistently, use the Cover View.
- If your business does not count covers or does not count them consistently, Avero recommends using the Check view.
The ability to manually input your forecasted cover or check view will allow you to forecast accurately.

Viewing the Prep Calculator
The Prep Calculator does not have a visualization. Instead, it will display a table report. This table will show what your BOH should prep based on forecasted covers and historical sales information from the past 5 like days. So if you are prepping for a Sunday, it will base the forecast on the last 5 Sundays, instead of a full week including days with sales that vary widely.
Use the Forecasted Prep Quantity field to enter how many checks or covers your business anticipates seeing on this day. Hit the Go button to re-calculate what you should prep. Keep the following in mind:
- Expand and collapse each category by clicking the + and - signs next to that category name.
- Expanding the collapsed categories will allow you to understand how much your team should be prepping of each item.
