Payments and Sales are Different Metrics

Payments represents every cent that is spent at a restaurant. Gross Sales represents only the menu items people are buying.

Spending that accrues to Payments and does not accrue to Gross Sales includes:

• Tips
• Taxes
• Service Fees
• Gift Cards
